
So the idea of a beetroot and feta burger came from scanning through veggie recipes online. I thought it sounded great, but could be jazzed up a bit. It’s a lovely alternative to a burger, or bought in veggie burger, and it’s actually quite easy and quick to make, also being more delicious than you think. Once you've made them a few times, you can play around with the toppings as there's plenty of delicious flavours you can have!
Ingredients:
1 pack of cooked beetroot (300g)
½ pack of feta cheese (100g)
2 slices of toast, (blended) (100g)
3 stalks of spring onion
½ red onion
¼ bunch fresh dill
¼ bunch fresh coriander
1 tspn coriander seeds
1 tspn cumin seeds
2 tspns Maldon salt
½ tspn cracked pepper
50g flour (roughly)
Vegetable oil
Method:
Chop the beetroot, red onion and spring onion up roughly and add to the food processor, start to blend the ingredients until they are fine and mushed together, add the feta, breadcrumbs, spices and seasoning and continue to blend. Once thoroughly mixed you can start to form your burgers and pat with flour on both sides, making sure that it doesn’t get clumpy. Set aside to chill for 30 minutes, which will firm them up, you can then begin to pan fry on both sides for approximately one minute per side.
Serving suggestions:
As a burger, with halloumi and coleslaw! Or on a bed of kale, sweet potato, halloumi and homemade burger sauce! (as in my picture)
